Tamales de Elote (appetizer)
These tamales, known as "Uchepos" in the state of Michoacan, Mexico, are great appetizers. They are made with corn kernels ground into masa (dough) which gives them the light sweet flavor of corn. We serve them topped with Mexican cream and queso fresco.

Garnachas Juchitecas
Traditional "bites" from the streets of Juchitan, Oaxaca, Mexico. They are five slightly thick handmade tortillas topped with tender shredded beef, cabbage, tomato salsa, and coitja cheese.

Cochinita Pibil
One of the most representative dishes of the Yucatan Peninsula with its origins in the Mayan culture. It is pork marinated overnight in citrus juices, achiote, and spices that is then wrapped in banana leaves and baked slowly until very tender. We serve it with white rice, black beans, and pickled red onion (with or without sliced habanero peppers) in the traditional style.
