Pollo Encacahuatado

One of Mexico's most traditional dishes all over the country.  It's base is peanuts (cacahuates) which with other ingredients added create a wonderfully crafted sauce.  This does have habanero chiles in the mix which offer just the right touch of heat.  It is served with chicken breast, rice, beans, and tortillas.  (gluten free with white or green rice)
